    The architectural challenge for this project centered on creating a temporary yet sophisticated taproom experience within a strictly regulated retail environment. The project required a mobile-first design strategy that could be deployed efficiently while meeting the high aesthetic standards of a Simon Property.

    The design intervention focused on a "Modular Hub" approach:

    • Repurposed Infrastructure: The centerpiece of the design is a modified 40-foot shipping container, engineered to serve as a high-capacity bar and POS station.

    • Expansive Site Programming: The ~2,550-square-foot site plan includes a fenced-in taproom with a mix of picnic and high-top seating, accommodating large groups while maintaining clear egress for mall traffic.

    • Operational Integration: GDS provided comprehensive permit documentation, including detailed site plans and elevation drawings, to coordinate with mall management, local building departments, and health inspectors.

    • Branding & Atmosphere: The design utilizes custom signage, perimeter fencing, and strategic lighting to define the "67 Degrees" brand identity within the larger retail context, creating a distinct destination for shoppers.

    The result is a successful "plug-and-play" hospitality model that provides 67 Degrees Brewing with a scalable platform for seasonal engagement.
